Ingredients:
1/2
pound ground round
one Large yellow summer squash
one medium to large zucchini, (wash and slice
both squash about 1/3 of an inch thick, remove only
large seeds if needed) one medium onion,coarsley
chopped
one c. potatoes, cubed small
1/4 c. chopped red pepper
4 c.crushed tomatoes w/ skins removed (beefsteak
or betterboy are best, nice `meaty,flavorful tomatoes)
1/3 c. parmesan cheese
2 1/2 c. jack or mozerella
1/2 t. sea salt
1/3 t. coarse pepper
two T. extra vigin olive oil
1 c. tomato juice
(1/2 water if needed)

Preparation:
In
non stick pan add oil, heat, add meat and onion,
brown lightly, add everything except cheeses, simmer
over medium heat w/ lid, check stir often until
squash is fork tender, place in baking dish, top
w/ cheeses and bake until cheeses are melted and
lighly browned, (12-15 min.)
Variations
use
ground pork, can use canned tomatoes if beefsteak
or other large good tomatoes ar not available, can
add one t. of Italian seasonings |

c.milk
2 T. butter, room temperature
1/2 t. salt
1/3 t. course pepper
7 T.cornstarch stirred into 1/2 c. of the milk
4 boiled eggs,sliced 1/4" thick
5 medium potatoes, cooked and sliced about 1/4
" thick, browned slightly in 1 1/2 T. extra
virgin olive oil
1 T. minced onion
3 1/2 oz.dried beef
1 c. frozen peas thawed
1/2 c. monterey jack cheese
1 T. dried or fresh parsley |
Preparation:
In
large sauce pan heat milk w/ butter, add cornstarch
mixture slowly stirring well, add cheese and stir
in well, add salt and pepper, add meat a slice at
a time, add remaining and carefully stir , heat
two minutes and cover let set a few minutes, great
served w/ hot rolls or biscuits, w/ honey butter
Variations
can
use prochutto, (if I spelled that right) ham, browned
bacon, or browned canadian bacon is yummy too! |
